Mussels “a la fare la scarpetta”

Was in the mood for a big bowl of mussels last night. So easy and delicious! @wholefoods – So fresh!

Rinse 1 lb of mussels well. Sauté 1/2 c chopped onion and 2 cloves of garlic in evoo. When onions are soft and transparent mix in the mussels and a 1/2 cup of white wine. Cover and simmer for about 10 minutes or when the mussels start to open. If you enjoy cherry tomatoes, slice a hand full in half and mix them in for a few minutes to soften up. If your someone who like a little heat like myself, sprinkle in some crushed red pepper flakes (peperoncino). All you need is some crunching, tasty Italian bread to dunk in and enjoy the savory sauce. As the Italians say, “fare la scarpetta”. Which means to wipe your plate with bread.
