Nonna’s Mac ‘n Cheese

Today the kids came home from school super hungry and request homemade Mac and cheese the way my mom use to make it. This delicious, simple dish can be made with almost any medium size pasta. Tonight I use orecchiette. You’ll never have it from a box again.
1 lb of pasta
1/4 cup butter
3 Tbsp flour
3 cups milk
2 cups cheddar cheese
1/2 cup parmigiana
1/2 cup Gruyere
Breadcrumbs or Paniko
2 Tbsp butter for on top
Dash of nutmeg (optional in the milk mixture)
Boil the pasta al dente, then in another pot melt the butter, mix in the flour and then the milk. Once blended together, mix in the cheeses until smooth and creamy. Place the pasta in a greased baking dish and pour the sauce over the pasta and mix well. The sauce may seem like too much but it will be absorbed later when baked in the oven at 350 for 20 minutes. Don’t forget to sprinkle breadcrumbs and place the butter on top before baking if you like.
